EGG LESS SUPER MOIST CINNAMON AND COFFEE CAKE(Food Remake)

Tried and tasted by Nivedita
Hi All,
bAKE, bAKE, bAKE AND bAKE....
BAKE THE CAKE,
CAKE BAKE
Are you all thinking something is wrong with me!! This is what has happened to me now a days.. Yeh BAKING ka BHOOTH  sar pe chad gaya hai, sarr pe kya pure dimaag me chaagaya hai, its controlling my mind and brain.
I had tried this cake almost a year back and those were my initial days of baking, It was not a flop but not good also. It was not baked properly. And I left the hope of baking it again. But, the other day when I was going through the recipe book, I got this one and this time I was very sure that it will come out good. Yes! and it came out like a ...??? no words.. I never thought I can bake an Egg Less cake with this much soft, moist and perfect. I am sorry, I am going on and on.....

Coming to the recipe,
I adapted this from Sanchita of http://litebite.in/
Check out her space.. if you are a baking bhooth and eating bhooth She got N numbers of baking recipes. Here is the link for today's recipe Cinnamon Tea Cake
This time, I have substituted few ingredients to suit the taste of my kids. My younger one likes chocolate in everything. So thought of adding some cocoa powder and to make it  healthier for kids, I added some nuts to it.
Coming to the recipe,
I have altered her recipe as per my taste.
Ingredients :
Dry Ingredients:
All Purpose flour - 1/2 cup
Whole wheat flour(I have used Aashirvaad brand) -  3/4 cup
Cocoa powder - 1/4 cup
Powdered sugar - 1 cup or less
Cinnamon powder - 1 tsp
Instant coffee powder - 1/2 tsp(I have used Nescafe, Rs.2 sachet)
Baking soda - 1 tsp
Salt - 1/2 tsp
Liquid Ingredients:
Vegetable oil - 6 tbsp
Vinegar - 1 tbsp
Yogurt or curds - 1/2 cup
Strong coffee decoction - 1/2 cup
Vanilla Essence - 1 tsp
Method:

  • Preheat the oven at 180°C.
  • Spread the aluminium foil in a rectangular tin for baking the cake and keep it aside.
  • Take all the dry ingredients and sift at least 3 times in a wide vessel. This is very important step.
  • In another vessel take powdered sugar and oil and beat it till it is soft, for about 8 to 10 minutes. I used a normal egg beater. ( not electric one)
  • Add the curd, coffee decoction, vinegar and vanilla essence in the sugar and oil mixture and mix thoroughly.
  • Slowly add the liquid mix in the dry mix and beat lightly till it blends well and get the normal cake mix. Don't over do it.
  • Pour this ready mix into baking tin and bake it for 15 min at 180°C and 10 min at 150°C or till done. The power of your oven plays an important role here. My OTG is more powerful. I always bake at lower temperature than given in the recipe.
  • Check with a clean knife or thin rod to check whether its baked properly.
  • Take it out from the oven and let it cool on a wire rack. Your Cinnamon and Coffee Cake is ready to serve.
Sanchita says you can keep it for a week, but mine gets over in a day or two.

Chocolate Chip and More Chocolate Ice cream with edible oil

    Tried and tasted by Nivedita
    Hi All,
One more Ice cream item in my Menu.. This time it is Chocolate Ice Cream.. More Chocolate and more Choco chips. My kids love Chocolate. Any thing with chocolate is fine for them. The other day my husband brought a box of ice cream. As usual I checked the ingredients and was surprised to see "Edible oil" in the list.
I thought of using oil while making ice cream next time.
But I was not sure where and when and how much oil is used :-(  Then I thought of giving it a trial.

    Ingredients:-
    Thick Milk - 1/2 litre + 1/2 cup
    Sugar - 1 cup
    Corn Flour - 3 tbsp
    Cocoa Powder - 1/4 cup
    Oil - 2 tbsp
    Choco Chips - 1/4 cup
Any Chocolate - small pieces (1 small bar)
    Nescafe powder - 1 tsp

    Method:
    Boil 1/2 litre milk.
Add sugar and boil till sugar is dissolved.
Take 1/2 cup milk and add corn flour and cocoa powder.
    Mix well till no lumps.
Add it to the milk and keep on stirring so that it won't get burnt.
    Add oil.
    Boil for 5 minutes.
Remove from heat and allow it to cool.
    Refrigerate it till its set.
Remove and churn in the mixi.
Transfer it into a box and add the choco chips(keep few for decorating), chocolate pieces.
    Mix well.
Keep in the refrigerator and allow it to set. After few hours when the ice cream is almost set, sprinkle choco chips, chocolate pieces and coffee powder.
Serve it when its fully set..

Adding oil definitely  made some difference as the texture was soft and even the taste was different.

Sending this yummy choco chips chocolate ice cream to Jagruti's

    Keep Chocolating :-)

Cocoa Cups - stuff it with any dessert..

    Tried and tasted by Nivedita
    Hi All,
I was seriously  thinking of some stuffed sweet ideas, and I saw this Baked and filled khakhra cups from , Thank you so much Lataji for giving me this superb idea of Cocoa cups. Stuff any dessert in this and serve.... I am sure kids will not stop eating these cups with whatever you fill in the cups and give them.
I turned her Khakra cups into COCOA cups. Her Khakra cups are for stuffing spicy food, and mine are for stuffing sweet food.

Here is the recipe for making these lovely cups.
    Ingredients:
Whole wheat flour(normal chapati flour is also fine) - 1 cup
All Purpose flour - 1/8 cup
Chiroti rawa or fine semolina - 1 tbsp
    Oil - 1 tbsp
    Cocoa Powder - 1/4 cup
    Sugar - 1/4 cup
    Pinch of salt
    Water to make the dough.

    Method :
(I have followed Lataji for the method)

    • Take all the ingredients in a large vessel, except water.
    • Mix well and go on adding water to make soft but stiff dough.
    • Keep it covered with damp cloth for 15 to 20 minutes.
    • Grease the muffin tray.
    • Preheat the oven at 180C
    •  Now the time comes to make the very thin puri size discs.
    • What I did was, first I rolled medium thick discs.
    • Cut it with bottle top to get the circle shape.
    • And again rolled each circle into a very thin puris. These should be very thin, otherwise cups will not come crispy.
    • Keep all the puris ready.
    • Take one puri and keep in in a mould to give a cup shape. Don't worry about the shape or curls you get in the cup.
    • Repeat with other puris.
    • Bake at 200C for 6 minutes.(Yes, thanks Lataji, the time was just perfect :-) )
    • Remove and spread the cups on mat or paper to cool.
    • Store in an airtight jar.

    Now coming to the stuffing:
Stuff these cups with AAMRAS, OR CUSTARD, ICECREAM, SHRIKHAND, SWEET WHIPPED CREAM, FRUIT CUBES, OR JUST BRUSH WITH NUTELLA SPREAD BEFORE SERVING.
YUMMY COCOA CUPS FOR KIDS PARTY :-))))))
I am sure you all will love these cups...

    Sending these cups to

    Chocolate Halwa(Food remake)

    Tried and tasted by Nivedita
    Hi All,
Trying to make some sweets adding chocolate. And suddenly remembered this halwa which I prepared few months back. It was Srivalli's recipe and I could not wait to make it. The photo was lying in my drafts.
Taking this chance to post it for the event.

    Don't compare my click with Valli's. :-)
For the recipe visit HERE by  Srivalli. Thanks Valli, for this recipe.
This is a winner dessert for everyone at home.
Giving you the recipe in my words:
    Ingredients:
    Cocoa powder - 1/2 cup
    Condensed Milk - 1 tin(400gm)
    Sugar - 1/2 cup+2 tbsp more.
    Butter - 50 gm
Nuts - as per your taste(chopped finely), you can skip this one.
I did a little variation, I did not roast the nuts.
I took 2 tbsp more sugar, as I knew the sugar I had was not so sweet.
    I used Microwave.
    Method:

Mix all the ingredients except the nuts, in a think bottomed M/W safe glass bowl.
    Mix well.
Cook on HIGH in M/w for 1 minute.
Take it out, Mix again and Cook till you feel the nice aroma of the Cocoa powder turning into choco flavor. It may take another one or two minutes depending on your M/W settings.
Take care not to make it thick. Otherwise it will become hard.
Garnish with nuts and serve it with cold ice cream or enjoy it like that only

    Hi All,
Chocolates..... Who does not like chocolate?? And home made chocolates??? Yes, we all love anything thats home made and as I say we are magicians in the kitchen to turn simple things into amazing mouthwatering and yummy dishes.
This time, its not me, I have followed the recipe from Sailu. She has made it very simple and tasty. I kept her recipe in my drafts since long time, but never got a chance to make it. But now, when I was checking the recipes, my daughter saw the photos in her blog and was behind me to make it NOW itself. Even I wanted to make something for 2 events.
And here I am with it. But I did not allow my daughter to eat more as she is down with fever.
    The original recipe is here.
    Ingredients: (I used)
    Marie biscuit - 12
    Butter - 1 tbsp(I used 2 Amul cubes)
    Cocoa powder - 1 1/2 tbsp
Condensed milk - 90g(A small tin)
    Vanilla essence - 1 drop
    I love this!!!
    Method:
    1. Break the biscuits in to pieces and powder them in a mixi. Sieve it to get the fine powder.
    2. Beat the butter for a minute.
    3. Add all the ingredients to the butter and mix well to make a soft dough.
    4. Divide the dough into equal balls and give desired shape.
    5. Decorate the choco balls with dessicated coconut or sugar granules or stuff it with some almonds. Or serve it just like that.

    Sending these to two events:
One is Jyoti's (The Veggie Hut )
    Lets Celebrate Sweets-Chocolate

another is Srivalli's (Spice your Life )

Eggless Chocolate Pudding on my Birthday!!

    Tried and tasted by Nivedita
    Hi All,
Today is my birthday and I turned 37 years! Nothing more to say about me!!
Today, I thought I will try some baking in the microwave oven, which I never did before. I have prepared rice, sambhar, vegetable and sweets, but I am always scared to try baking a cake, pie or pudding or jelly!! I remember once, I tried dates cake from shilpa of Aayi's Recipes. It came out good, but I was not happy with that.
I was searching for some quick and easy recipe, and I got THIS one. This site does not have photo. So I thought of taking pictures.

I have kept all the ingredients in the photo, except GHEE.

    It came out very good!
But, what I thought was If we keep the ready mix for some time before adding cocoa powder it will be good, as I felt, the semolina is still not cooked full.

Mom prepared PURI, POTATO DRY SABJI AND SEVIYAN PAYASAM.

Planning to celebrate my birthday with my elder daughter's which falls on March 30.
    Keep Smiling,
