LIFE IS FULL OF COLORS, LIFE IS ABUNDANT, LIFE IS LIKE HOLI

Tried and tasted by Nivedita
Hi All,
Thank you guys for being with me here though I did not post anything in the whole year. Love you all.

MARCH is Special month for me for many reasons. First is, its the month I am born ;-) . I love March because it is the season for Mangoes. In my husband's family ,10 of us celebrate our birthday :-). March 1st starts with my Sis-in-law's son"s birthday and March 30th ends with my daughter's birthday.
And I started blogging on March 12, 2009.

Another most favorite reason is its the month where we celebrate the  festival of colors HOLI. Yes!!! this post is all about HOLI. I want to thank Jagruti for inviting me to share about this festival and how do I celebrate my Holi.
Here is the link for Jagruti's space to read about other friends who has shared about their celebration and their view about Holi
http://www.jcookingodyssey.com/2016/03/channar-puli-paneer-gulab-jamun.html

only few photos of my Holi celebrations.

Holi is the only festival I celebrate with all my tann, mann and dhan :-) ;-)
Though there are so many stories behind this festival and many religious beliefs and customs to follow,  I believe life is like this festival. Its full of all types of colors. All emotions we feel represent each color. And I love all the colors of  life which allows me to enjoy this life every moment.
Coming to the HOLI day. My day starts early with making breakfast and lunch ready and keep it aside so that once we come back after playing, the food should be ready. I can play without any tension. Till two years back, mom was there with us on this day and two maids were there to help mom to make special Holi food. I was not worried, but now as I am alone here, I had to prepare and keep. And  its not only  me, my friends bring their food and keep it in my house. We all play and come back to our house and enjoy the food together. We all go in our bikes in a group and visit almost all the nearby areas. Stopping wherever people are playing,  playing with them, screaming with joy. I am out of the world on that day. Sometimes I keep on shouting "happy new year" , "happy birthday" some irrelevant wishes and dance on the road with friends and kids. People think I have taken Bhaang!!!
After playing, taking bath, we all gather in our house, have the food and drinks and it goes till 6 pm.
Puran poli is must on that day in North Karnataka.
Just to give a twist, I am linking my old recipe of

Biscuit Poli for Holi.

Its different from traditional Puran poli.

HOLI HAI BHAI HOLI HAI, BURA NA MAANO HOLI HAI :-)

Waiting for this year HOLI. Its only a week ahead, already planned for the day.

My next posts will be on "My journey of thirteen days on raw food diet"

Jamoon Fruit Juice -Two ways, Re posting for the event

Tried and tasted by Nivedita
Hi All,
Summer is here, and the events are coming up to help us to beat the thrust :-),
When I went through Swathi's zestysouthindiankitchen space, I thought of re posting this juice as the season for this fruit is already started and its easily available.
Read my original post HERE.

Swathi has asked to write about any interesting story behind this recipe or if you have any memories with this. Down is my story :-
Jamoon fruit brings many sweet memories in my mind.. These fruits are seasonal and we used to wait for it. During school days, we used to run to the houses where these trees were grown. House people enjoying their afternoon nap were never disturbed till one stone fell on their roof or window glass :-). And then there were few old ladies carrying these jamoon fruits in their round baskets and selling it for 10 Paises. I always love the color of these fruits.

You can read the benefits and other details in my original post.
Coming to the recipe,

Ingredients (for making 2 glasses) for basic juice
Jamoon fruits - 20(big)
Drinking Water - 1 cup
Keep the fruits in water for some time. Clean and put it into a vessel. Add the water and allow one boil. Let it cool. Mash with the hands, remove seeds. Sieve in a serving cup. The basic juice is ready which tastes very raw and bitter.

To make salty juice :
Add a pinch of salt, Crushed mint and white pepper powder. Mix well. Serve chilled or add few ice cubes if you want to serve immediately.

To make Sweet juice :
Add 1 to 2 tsp Sugar, half a pinch of salt. Mix well. Serve chilled.

SPICY SPROUTED FENUGREEK SEEDS MASALA(Reposting)

Tried and tasted by Nivedita

Hi All,
They say sprouts is good for health. Any sprouts? I am not sure, but this one is really a healthy sprout and I enjoy having it a lot.
Thrice a week I have a habit of having a tea spoon of methi seeds in the morning with hot water. I love methi seeds and never miss any chance of adding it into our food. I add it in curries, sambhar, dal, sometimes in some sabji. So how about making the whole curry with methi seeds. But that will go directly in to the dustbin as these seeds are very bitter if prepared directly. So the best way is to soak them, allow to sprout and then use in a spicy, tangy dry curry.
Fenugreek seeds have their unique taste and contribute a huge part when comes to health. Its good for diabetes. It controls the diabetes to some extent(of course with other intakes or controlled diet)
If we take a tea spoon of methi seeds with a glass of water when suffering with diarrhea, it comes under control.
Soak the seeds in the night and paste it in the morning. Apply it to the hair for an hour and wash it, a very good tonic for your hair.

Ingredients:
Fenugreek seeds or Methi seeds - 1/2 cup
Soaked for 6-8 hours. Drained and then kept in a cotton or muslin cloth for a day or till it gets sprouted.

Oil - 2 tbsp
Cumin seeds - 1 tsp
Mustard seeds - 1 tsp(optional)
Onion -2 big, finely chopped
Tomato - 1 big, finely chopped
Ginger-garlic paste - 1 tbsp
Green chilly - 2 slit
Salt to taste
Red chilly powder - 2 tbsp
Turmeric powder - 1/2 tsp
Garam Masala powder - 1 tsp
Jaggery - 1 tsp
water - 1/2 cup
Fresh coriander to garnish

Method:
  • Heat oil in a thick bottomed kadai.
  • Add cumin seeds and Mustard seeds.
  • Add onion and fry till brown. Keep on stirring.
  • Add Ginger and garlic paste. fry for a minute.
  • Add tomato and little water. Mix well and cook till the tomato is half cooked.
  • Add sprouted methi seeds and other ingredients.
  • Mix well.
  • Add some more water.
  • Cook for 5 minutes.
  • Adjust the seasoning.
  • Check the seeds, cook till soft. (It may take another 5 minutes.)
  • Garnish with fresh coriander.
  • Enjoy it with soft chapatis.
My aunt says its stays good for 3-4 days so good while travelling, but I never kept it more than one day...

ALOO PATTICE (Re posting)

Tried and tasted by Nivedita
Hi All,
If you really know me and follow my blog, you know that I am a person who finishes the work at the last minute. As the last date is nearing  for any contest puts me into pressure and I do the cooking or posting.
Here is a recipe which I am re posting it for my dearest Jagruti. But Promising that next two days are only for her... for her ongoing event  :I'm well stuffed.

Directly going to the recipe,( Aloo Pattice  is the original post)
Ingredients:

Potato -4 big
Haldi - 1/2 tsp
Kiraksali - 3 bunch(Washed, cleaned and finely chopped)
(In Harsha Bennur's blog (http://girmitt.wordpress.com/2008/07/25/roasted-kirkasaali-tandulsa/), he has given the name as Tandulsa for Kiraksali, I do not know which language it is.)
Green Pea(fresh or frozen) - 1/2 cup
Green chilly - 3 small chopped
Curry leaves - few chopped
Raisins - 8 to 10
Cashew nuts - 8 to 10 cut into pieces (optional)
Khus khus(poppy seeds) - 2 tbsp
Oil - 1 tbsp
Dalda or Vanaspati - 1 tbsp
Salt to taste
Lime juice - 1 tsp
Rice flour to dust the pattice
Oil to fry the pattice

Method:
Boil the potatoes. When cool, mash it. Add little salt (1 tsp) and haldi, mix it properly and keep it aside.
Heat oil and vanaspati in kadai, add curry leaves, peas (if frozen, keep it out of the fridge for 10 minutes before using it), green chilly. Saute it for a minute, now add raisins, cashew nuts and poppy seeds. After a minute add kiraksali. Add salt and haldi. Mix it and let it cook till the green leaves are cooked. Now add lime juice and mix it and keep it aside.
Next step is to make pattice and fry them in oil.
Make equal size(Big lemon size) of mashed potato. Take one, and press it on your palm to make it flat. Stuff it with ready leafy vegetable. Take care to cover full vegetable with potato. Otherwise all the masala will come out while frying. Do for all the potato balls. Dust the ready balls with rice flour.
Now, heat the oil in kadai. When hot, fry the pattice one by one till golden color.
4 to 6 pattice can be prepared with this quantity.

Green chilly fries(Re posting)

Tried and tasted by Nivedita
Hi All,
All time favorite at home. Have with hot rice and dal, have with puran poli or holige or any sweet dish.. Make yogurt poha with it, just add it to the rasam...
We love these fried chillies and we never forget to make these during summer and preserve it for the whole year.
Re posting the same for the event

Green chilly fries

I
Coming to this recipe,  these type of green chillies are available only during February and March month. So it is perfect to prepare these in Summer as these chillies need sundry.

Fresh long green chilly - 1 kilo
Fresh yogurt or curds - 1/2 kilo, adjust less or more as per required
Salt to taste
Hing - 1 tbsp or a pea nut size(crushed) if using hard hing
Long thick needle to slit the chillies

Wash the green chillies and dry with soft towel or cloth to remove any water. Slit all the chillies on one side so that the curd gets mixed.
Transfer the curd in a big plastic or glass bowl.
Add salt and hing. Mix it well.
Add slit green chillies in to it and with a wooden spatula or bare hands(if you can bear the pain later :-)  ) mix the chillies with curds.
This should be prepared in the morning so that you can keep it to dry.
Spread a thick cleaned plastic sheet in a place where there is lot of sun rays. Take only the chillies(leave the curds in a bowl itself and keep it covered)and spread these on the plastic sheet. Allow to dry till evening. In the evening, again put the chillies back into curds. Mix it properly and keep it till next morning. Again take only chillies and put to dry like previous day. Repeat it for 3 days. From 4th day, dry the chillies till they are totally dry. This may take 2 days depending on the weather. Once the chillies are dry, the color will also change to brown.
Store in air tight container (good plastic or glass will be fine ). You can store it for a year also.
When ever required, take the chillies out and fry in hot oil. Use it with rice, chapati as a side dish.

Hi All,
One of my favorite breakfast... Chapati Poha

Stuffed Sweets together (Rereposted)

Tried and tasted by Nivedita
Hi All,
I don't know who is playing around! some times is G. chrome or sometimes its with the blogger. I am not able to post regularly.
When I think about stuffed sweets, I am not getting many ideas. Still I have time to try new recipes. Hope I will come out with something different stuffed sweet :-)

Here are few stuffed sweet recipes from the archived posts for the event.

The first sweets is on healthier side as we don't fry the dumplings but cook in the water. I love this one when its hot and served with more ghee :-), Usually its prepared on Nagapanchami.

The second one is my invention and was so happy with it. I just loved the taste, even my kids loved it. Need to make it again soon. Wait for new addition in coming posts.
A Perfect sweet for winter which is prepared in North Karnataka. I love this. You can store these for a week and enjoy it.

Again another favorite sweet dish.

Eat Breakfast(s) like a King:-) (Remixed and Reposted)

Tried and tasted by Nivedita
Hi All,
I do strongly believe in "Eat Breakfast like a King, Lunch like a Queen and Dinner like a Pauper" I strictly follow it during routine days(School days, office days), except when there is weekend or some special occasions or if someone is giving a treat :-)))))).
I always plan breakfast menu at least 3 days before or some times for a whole week. During school days, our breakfast is Chapati and different types of vegetables on alternative days, and the other days are fixed for typical South Indian breakfast like Idly, Dosa, Paddu.
I am reposting few of my favorite breakfast from my blog. Its not possible to put all the recipes in one post, so selected only few which I really love to eat in the morning.
And I have selected the recipes other than Dosa and Idly :-)

Chapati Poha: one of my favorite breakfast which stops me by wasting the left over chapatis and its healthy too.

Thaali peeth! (Masala Rotti) : again the most favorite one and it saves me from struggling to give vegetable to  my daughter. Its very common in our house with alterations, We keep on changing the vegetable in this. Sometimes we add grated vegetables, sometimes spinach or methi or spring onion..

Nutty Egg Omelet :  Do I feel embarrassed to write again its one of my favorite??? NO, I love Eggs and anything made with it, and this Nutty Egg Omelet is the best breakfast for me.

Mix Veg Poha ::The next is my daughter's favorite : Poha :-). most of the times I am saved because of this. When she is really hungry I don't think much but goes for this, but try to add more vegetables to make it healthier :-)

Puri Kurma :- My daughters wait for this one :-)

Last from my selection : Is regular parathas which I I try not to repeat the same stuffing in a month. But many of the parathas are not yet posted in my blog. May be I will do that soon. Just giving two links here :

4 ways to make Methi Paratha (Fenugreek paratha) :- again it saves me :-)

Tri Colored Chapatis and Tomato Chutney! :- This is from my mom, I love to have it any time.

These all are my last minute entries  going to participate in Srivalli's Breakfast Mela :
