CORN AND CABBAGE SOUP

Hi All,
How are you all ladies? Are you ready for the party for this month. I am waiting for your entries and waiting to get my partner. :-) Thats the specialty of this event right??
This month I was in confusion about choosing the recipe and at last I am here with a very simple but very essential part of any great party. Yes, meal is not complete without soup.The original Indian food never had soup in its list. But, its long time that SOUP has become the integrated part of our cuisine.
My younger daughter loves soup. She has kept the name for all soups, like Palak soup is Green soup, Tomato soup is Red soup, cabbage soup is White soup...
I always make hot and sour soup at home, but never tried this Corn soup. The weather is also cold in the evenings now a days. So thought of making this one and bringing it to our party :-)
I have followed very basic and simple recipe:

Ingredients:
Fresh corn - 2 medium(or take frozen one or canned one, in that case 1 cup)
Cabbage - 1 cup grated
Butter - 2 tsp
Garlic - few cloves, chopped finely
Onion - 1 small or half, chopped finely
Green chilly - 1 chopped(avoid if serving it for kids)
Milk - 1 cup
Water - 1/2 cup(if needed)
Corainder - 1 tbsp shopped + 1 tsp to garnish
Salt to taste
Pepper to taste
Lemon to taste


Method:
Clean the corn and take out the corns, you can remove the corns with sharp knife or grate it (if using fresh one),
Finely chop the cabbage. 
Take both the cabbage and the corn in a cooker, add little water(just to cover)
Give 2 whistles.
Allow to cool. Once cool, grind into fine paste.
Heat butter in a sauce pan or kadai,
add chopped garlic and onion. Saute it till brown.
Add the corn and cabbage puree.
Stir well and cook for 3 minutes.
Add the milk and cook for a minute.
Add chopped chilly and coriander.
Add water if you feel the soup is thick.
Mix well and boil it few more minutes.
Remove from the heat and add salt, pepper and lime juice.
Serve hot garnished with some more chilly(if you like raw chilly taste) and pepper.

Grated Vegetable Soup

Hi All,
Last week, I went to my cousin's house to stay for 2 days. May be because of change in weather, water, Phalguni fell ill. When I came back I had to rush to the doctor. She had high fever with severe infection. Doctor prescribed antibiotics and told to keep her on liquids.Now it was my testing time, yes!! I get nervous when kids fall sick. I go blank.. 
I wanted to give her something like soup which keeps her full and which is healthy. As usual, without planning, I entered the kitchen to check what I have and what I can do.
I got Carrot, Potato, Cabbage, Beetroot,  Peas. 
That was it, but no time to boil the vegetables as I had to finish before she got up. So thought of grating the vegetables.
Here is the recipe:

Ingredients:

Cabbage :- 1/4 cup
Potato - 1 medium, peeled
Beet root - small, peeled
Carrot - 1 medium, peeled
Baby corn - 1 small
Peas- 8 to 10(you can add more, I just wanted to give colour to the soup)
Corn flour - 1 tbsp
Oil - 1/2 tsp(You can use butter also)
Ginger and garlic - 1/2 tsp, finely chopped
Salt to taste
Pepper powder - a pinch
Lime juice - 1/2 tsp 
Water to make the soup

You can add
Soya sauce - 1 tsp
White vinegar - 1 tsp

Method:
Grate all the vegetables.(Except peas)
Mix cornflour in 1/4 cup water and keep aside
Heat oil or butter in thick bottomed kadai.
When hot, add ginger and garlic, saute till light brown.
Add all the grated vegetables and saute for some time till the raw smell goes(it takes 3 to 5 minutes)
Add 2 cups of water and boil till the vegetables are almost cooked. (It takes 8 to 10 minutes)
Add the salt, pepper powder and cornflour.
Mix well and adjust the seasoning and the thickness of the soup. You can add more water if you feel its very thick.
Boil for  few more minutes for the cornflour to get mixed well.
If you are adding vinegar and soy sauce, its the time.
Remove from the fire and add lime before serving.
Great and healthy soup for any one. ( it was enough for 4 people)
My daughter enjoyed it luckily.
Now she is feeling better. (magic of mamma's soup!!!)

Idli, Soup and Sweet from Veg Inspirations for T&T

Hi All,
The blog selected  for this month's Tried & Tasted event is one of those blogs, where you get everything which you can follow blindly and get the good food at home. I am doing the same. Usha of  Veg Inspirations  has huge number of recipes in each category. Most of the times I will be browsing for some recipe and I end up in visiting her blog.
This happened when I got the recipe for making Microwave milk pedha. I got recipe to make it, and that recipe was inspired by Usha's pedhas!!
I have tried many recipes before also, but have not clicked any photos. But, now for the event, I have clicked the photos. 
First one I tried last month is, 
Barley Pinto Bean Soup : I followed the exact recipe except olive oil as It was out of stock and the Celery, which we do not get here. The taste was very good. Its healthy. I loved it, my daughter had it but was not much happy with the taste as she is not used to barley taste.

The second one was 
Quick & Simple Milk Fudge ( Microwave Doodh pedha ...) I followed it except the kesar or saffron and Pista for garnishing. I do not know why the color of pedhas are different from her photo.

The third one was 
Instant Oats Idli : I copied it exactly!! These softest and just melt in mouth idlis are really good breakfast or evening snack for everyone. I have kept full box of prepared oats and semolina powder to make idlis again.

Tomato and carrot soup

Hi All,
A simple soup for the soul suffering from cold and cough!!!
This is my elder daughter's favorite!


Tomatoes - 3 big or 8 to 10 small(as in photo)
Carrot - 1 big
Onion - 1 small
Ginger - 1/2" 
Bay leaf - 1
Keep all the above ingredients in a cooker and give 3 whistles. When cool, open the lid. discard the ginger and bay leaf. 
Put the boiled tomato and carrot in a blender for 30 seconds and sieve it to remove the tomato seeds. Keep it aside.
For soup powder,
Dry ginger powder -1/2 tsp
Roasted jeera powder - 1tsp
White pepper powder - 1 tsp
Salt to taste
Sugar - 1 tbsp
Butter - 2 tsp 
Butter - 1 tsp to garnish

Heat butter in a kadai, add the tomato and carrot puree. Boil it. When the first boil starts, add all the powders. Boil for 3 more minutes. Garnish with butter and serve hot!

A healthy green soup for all!

Hi All,
I am not much in to boiling soups. Even though I love to have, somehow I do not like to cook for myself.
But  soup was urgent need for my both daughters. Last month both fell sick and doctor's strict advise was to include any soup in their regular food. Just for my kids, I had to start making the colorful soups. This one is one of those I tried.

 Some times,my camera plays tricks with me!!!
My younger daughter does not link spinach or palak. So I play few tricks to feed her the same. And what can be the best trick than adding palak in the soup????
Coming to the recipe,
Potato - 1 medium, washed, peeled and cut into cubes
Spinach - 10 to 12 leaves, cleaned, washed and chopped.
Tomato - 1 big, washed and cut
Cabbage - 2 leaves, washed and cut
Onion - 1 small, cut into cubes
Ginger - 1/4", washed, peeled. Keep it whole.
Keep all the vegetables in a cooker with very little water. Give 2 or 3 whisltes. When cold, discard the ginger.
Puree the vegetables.

For tempering,
Butter or oil - 1 tsp(for kids, add both)
Garlic - 2 cloves, chopped finely
Salt to taste
White pepper powder - 1 tsp
Milk - 2 tbsp
Heat oil and ghee(if adding) in a pan.Add garlic and brown them. Now add the veg.puree. When it starts boiling, add white pepper and salt. Boil it for 2 minutes without covering. Add milk before taking it down the flame.
Immediately serve it in a bowl.
This soup is good for every one. If you avoid potato, its good for reducing weight and diabetic patients.
Do not skip tomato as it helps spinach to get digested.
